Blackberry Buttermilk Cobbler

Serves 8 · 15 min prep + 45 min bake

Late-summer blackberries bubbling up through a tender buttermilk batter. The kind of cobbler that gets poured together in one dish and comes out golden at the edges.

Ingredients

  • 4 cups fresh blackberries
  • 1 cup plus 2 tbsp granulated sugar, divided
  • 1 tbsp lemon juice
  • 1/2 cup (1 stick) butter
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 tsp vanilla extract

Instructions

  1. Heat oven to 350°F. Toss the blackberries with 2 tbsp of the sugar and the lemon juice; set aside.
  2. Melt the butter in a 9×13 baking dish in the oven, then remove.
  3. Whisk the flour, remaining 1 cup sugar, baking powder, and salt. Stir in the buttermilk and vanilla until just combined.
  4. Pour the batter over the melted butter — do not stir. Spoon the berries evenly over the top.
  5. Bake 40–45 minutes until the top is golden and the fruit bubbles. Cool 15 minutes and serve warm.
