Sips & Syrups
Spiced Apple Cider Syrup
Makes about 1 1/2 cups · 35 min
Boil fresh apple cider down with a few warm spices and you get a glossy, concentrated syrup that tastes like fall in a jar. Stir a spoonful into sparkling water or hot tea, drizzle it over pancakes and roasted squash, or splash it into a bourbon for a cool-evening nightcap.
Ingredients
- 4 cups fresh apple cider
- 1/4 cup packed brown sugar
- 1 cinnamon stick
- 3 whole cloves
- 2 allspice berries (or a pinch ground)
- 1 strip orange peel
- 1 tablespoon lemon juice
Instructions
- Combine the cider, brown sugar, cinnamon stick, cloves, allspice, and orange peel in a saucepan.
- Bring to a boil over medium-high heat, then lower to a steady simmer.
- Simmer uncovered 25 to 30 minutes, stirring now and then, until reduced by about two-thirds and lightly syrupy (it thickens more as it cools).
- Stir in the lemon juice and simmer 1 minute more.
- Strain out the spices and pour the syrup into a clean jar.
- Cool, then refrigerate up to 3 weeks. Use about 1 to 2 tablespoons per drink.
