Spiced Peach Freezer Jam

Makes about 4 cups · 30 min + set

August peaches at their ripest, cooked down just enough to hold their shape, with a whisper of cinnamon and ginger. No canner needed — it sets in the freezer and tastes like summer in the middle of January.

Ingredients

  • 4 cups peeled, finely chopped ripe peaches (about 3 lbs)
  • 1/4 cup fresh lemon juice
  • 3 cups granulated sugar
  • 1 package (1.75 oz) no-cook freezer pectin
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • Pinch of salt

Instructions

  1. In a large bowl, stir the chopped peaches with the lemon juice, cinnamon, ginger, and salt.
  2. Whisk the sugar and freezer pectin together, then add to the peaches. Stir constantly for 3 minutes.
  3. Let stand 5 minutes so the sugar dissolves and the mixture begins to thicken.
  4. Ladle into clean freezer-safe jars, leaving 1/2 inch at the top for expansion.
  5. Let sit at room temperature 24 hours until set, then freeze up to 1 year (or refrigerate up to 3 weeks).
